Instructions to make Pain:
- Mettre dans le bol du robot la farine, l’eau et la levure. Pétrir pendant 6 minutes à vitesse moyenne.
- Ajouter le sel et pétrir de nouveau pendant 5 minutes.
- Mettre la pâte à pousser à température ambiante pendant 1 heure recouverte d’un torchon humide.
- Une fois ce temps passé, filmé et mettre la pâte toute la nuit dans le frigo.
- Le lendemain, dégazer la pâte sur le plan de travail fariné. Former vos pains en fonction de ce que vous voulez obtenir.
- Les mettre à pousser de nouveau. Pendant ce temps, préchauffer le four à 240ºC en mettant un récipient qui ne craint pas la forte température.
- Une fois le four bien chaud, grigner le pain (avec un couteau ou mieux une lame de rasoir faire des traits sur le pain). Vaporiser les baguettes et les enfourner pendant 35 minutes.
