Rinse with water and squeeze out excess moisture. Thinly slice the courgettes using a sharp knife, mandolin or slicing blade on a food processor. Put in a bowl with the shallots and sprinkle over the salt. Drain the courgettes thoroughly and pat dry using kitchen paper or tea towels.

  1. Lavez une courgette. - Coupez-la dans la longueur et roulez les lamelles dans la longueur doucement.
  2. Placez les roulades (sur un premier étage) dans un bocal qui servira à les faire mariner par la suite. Comblez les trous par de la mozzarella coupée en cubes.
  3. Versez de l'huile d'olive au romarin, un mélange de Sel Halen Mon, Sel Fou, Poivre crispé et de Baies roses.
  4. Placez une 2e couche de courgettes et mozza et répéter la précédente opération jusqu'à épuisement.
  5. Fermez votre bocal, remuez et laissez macérer minimum une nuit au réfrigérateur. L'idéal est de le laisser 1 journée minimum pour que ça s'imbibe.
  6. Servez en apéritif avec des piques, c'est super bon et sain
